I love cooking thats a well known fact however being in college full time and living at home and studying late nights I can’t always sit over the stove for more than 30 minutes. One night my cousin called me at 2:30 pm on a Saturday and said “hey can my mom and I come over for dinner?” and I was like sure he said “I’ll be there at 4:30” I was so frantic because chicken can’t defrost fast enough. I looked in the fridge and the freezer and I saw I had sweet Italian sausage, onions, zucchinis, peppers, and tomatoes along with 3,000 types of seasonings and jar tomato sauce. Being Italian I always have pasta on hand so I served it over pasta. Best part of this dish is its one pan I used a non-stick frying pan!
Serves: 4-6 Prep Time: 10 minutes Cook Time: 25 minutes Total Time: 35 minutes
Ingredients:
- 3 sweet Italian sausage depending on how many people!
- Half of one white onion sliced (you can use a whole onion depending on how many people)
- a handful or so of mini sweet peppers but if you don’t have mini peppers than 2 large peppers of red, green, or yellow depending on your preference.
- you can use jalapeños, zucchinis whatever other veggies or meat you can make its a great base
- whatever pasta you want to use works
- 1/2 cup of jared pasta sauce
- 3-4 cloves of garlic minced
- I didn’t have fresh tomatoes on hand but when I do I add about 4 tomatoes diced
- 1-2 teaspoon of salt & pepper (add more if needed
- 1-3 teaspoon of Italian seasoning
- 1-3 teaspoon of parsley
- 1-3 teaspoon of red pepper flakes (more if you want spicy)
- 1-3 teaspoon of oregano
- 1-3 teaspoon of rosemary
- 1 tablespoon of olive oil
- I didn’t have basil on hand but I love using fresh basil if you were to add it 3-4 leaves of basil

Directions:
- Take your knife and cut the casing of and I just cubbed the sausage into bit size pieces. (I used frozen sausage and defrosted it in the microwave half way)
- Turn on your pan on medium-high heat and when it gets warm had the sausage to it. let it cook for 5-7 minutes continuously stirring
- When it starts to get brown add in your peppers and onions with salt & pepper let them cook until soft
- When the peppers and onions are getting soft add in your garlic, let the garlic cook
- Then add all of your seasonings and olive oil
- Add your tomato sauce and tomatoes ( if using)
- Let the sauce come to a simmer
- You can add more seasonings now if needed
- When everything comes to a simmer add about 1-3 tablespoon of Parmesan cheese (optional)
- Serve over pasta or let it be
- Enjoy
